Jersey (not a jumper or a pullover) are small dairy cattle, originally bred on Jersey in the the Channel Islands.

Jerseys are popular for the high butterfat content of its milk. All well and good, but it now leaves the populace worried about the high saturates in our diet. Specifically, we think about the consequential risk of high cholesterol.

Not that cholesterol is bad in itself. That is to say, we need this fatty substance in our blood, which is produced naturally in the liver. Everyone has cholesterol. We need it because every cell in our body uses it. But there’s bad and good cholesterol, and saturated fats are bad, says science.

Oh well, back to the cow, which is known for its easy-going and genial disposition. That’s good, isn’t it.

Did you wonder how a jersey (as in something to wear) got its name? It’s also from the island of Jersey, where the particular style of knitting fabric originated.

To get more technical, there’s single jersey (flat on one side, a nap on the other) and there is double knit. The double knit is interlocked and flat on both sides. You find it everywhere and that’s down to Coco Chanel. It was she who first popularised it in high fashion, all those years ago.
