Dijon Fields

A Mother’s Day card with a quote from Lao Tsu that nature does not hurry and yet everything is accomplished.

Sounds like a good mother, yes?

The scene here is of the brilliant-yellow mustard fields of Dijon. One can almost taste the delicious, grainy mustard for which the region is known.

One Jean Naigeon is credited with the recipe for Dijon mustard, but did you know that almost 90% of the world’s mustard is grown in Canada and the USA?

Most mustard producers like the famous Maille company established in Dijon in 1777 buy seed from North American farming cooperatives that maintain huge quantities of seed especially for the mustard market.

Hard work behind the scenes and a delicious finished product – sounds like a good mother, yes?
